Pour over · Las Lajas

Hario V60

Las Lajas is the premier mill in Costa Rica, and this coffee is an example of why: super aromatic, with notes of tropical fruit and banana, and strawberry, kiwi and juicy wine in the cup. Brewed on a Hario V60.

What you’ll need

  • Hario V60
  • Scale
  • Burr grinder
  • 200°F filtered water
  • 25 g coffee

Steps

  1. Put 25 g of coffee in your brewer. You are brewing 400 ml of 200°F filtered water through it.
  2. 0:00–0:10: pour to 50 ml.
  3. 0:45–1:00: pour to 150 ml.
  4. 1:10–1:20: pour to 250 ml.
  5. 1:30–1:40: pour to 320 ml.
  6. 1:50–2:00: pour to 400 ml.
  7. Total brew time: 2:30–3:00.

Matcha · At home

Iced Matcha Latte

Make our matcha latte like a pro. A quick, approachable version of the recipe we pour in our cafés, so you can make it from the comfort of your own home.

What you’ll need

  • Ceremonial Blend Matcha
  • Scale
  • Whisk
  • Bowl
  • Water
  • Measuring cup
  • Sweetener (optional): honey or agave
  • Milk or a milk alternative

Steps

  1. Weigh and sift 2–3 g of matcha to remove clumps. Without a scale, 3 g is about 1 teaspoon.
  2. Add 30 g of water to the bowl.
  3. Rinse your whisk with hot water, then whisk the matcha in a circular and zig-zag motion for about 1½ minutes, until a light foam forms.
  4. Pour the whisked matcha into a new glass.
  5. Add about ½ oz of sweetener and stir to combine.
  6. Add milk until the drink reaches 8 oz total.
  7. Pour over ice and enjoy.
