A cup of coffee is almost entirely water. If the water is wrong, nothing you do at the grinder or the machine will make the cup right, and you will spend months chasing the problem somewhere it is not.

Water is also what quietly destroys equipment. Scale builds inside a boiler where nobody can see it, and by the time it shows up in the cup it is already a repair bill.
