Cherries are usually processed the day they are picked, sorted for ripeness, and rinsed clean. They are then spread across raised beds, patios, or tarps and turned regularly over the course of drying, which can take roughly 30 to 40 days depending on the weather. The extended fruit contact is what gives natural coffees their characteristic jammy, winey, full-bodied character.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eABOUT CERRO BUENA VISTA:\u003c\/strong\u003e Cerro Buena Vista is a family-run micromill in the Pérez Zeledón canton of Costa Rica's Brunca region, founded in 2015 by Luis Carlos Torres Zuñiga, his wife Hanny, and their children Richard and Kristel. Spurred by the instability of cherry prices, the family stepped into processing without prior experience, driven by a shared dream and a good deal of optimism. The mill sits at around 1,700 meters near the Cordillera de Talamanca, where rich soils and a favorable microclimate are well suited to high-quality coffee. The family processes washed, honey, and natural lots — some with anaerobic fermentation — and runs an ecological wet mill that minimizes water use and turns organic waste into fertilizer. Several of their contributing farms, including Finca Los Pinos and Finca Ponderosa, have earned a strong reputation for experimental natural and honey processing.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eABOUT THE VARIETY:\u003c\/strong\u003e Yellow Obata is a yellow-cherry selection of Obatã, a Sarchimor-type variety developed in Brazil from a cross of Villa Sarchi and the Timor Hybrid. Like other Sarchimor lines, it carries strong disease resistance — particularly to leaf rust — along with good productivity and a compact, sturdy plant well-suited to the wet, humid conditions of southern Costa Rica. The yellow-fruited form is prized for the clean sweetness it can develop when fully ripe, which makes it a natural fit for fruit-forward natural processing.
